Ingredients:
- 225 ml of Ecomil almond milk sugar-free
- 50 g of cashews
- 1 teaspoon of lemon zest
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of agave nectar
- A pinch of salt
- 3 tablespoons of chia seeds
- 1 mango (for plating, optional)
Recipe (for 2 – 4 serves)
- Combine all of the ingredients, except the chia seeda and mango, in a blender. Blend the mixture on high until smooth. Taste and adjust the lemon or sweetener to your liking.
- Whisk the chia seeds into the mixture (make sure that they don’t clumb up)
- Pour the mixture into a glass jar. Cover with a lid and refrigerate overnight, or for at least 2 hours to allow the chia to form the pudding
To plate your pudding, take a mango and cut it in small pieces. Spoon out the seeds and scoop the pudding into the middle. Serve cold with a spoon.
