Lemon mango chia pudding

Ingredients:Ecomil recipe, chia pudding, Ecomil almond milk, mango recipe

  • 225 ml of Ecomil almond milk sugar-free
  • 50 g of cashews
  • 1 teaspoon of lemon zest
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of agave nectar
  • A pinch of salt
  • 3 tablespoons of chia seeds
  • 1 mango (for plating, optional)

Recipe (for 2 – 4 serves)

  1. Combine all of the ingredients, except the chia seeda and mango, in a blender. Blend the mixture on high until smooth. Taste and adjust the lemon or sweetener to your liking.
  2. Whisk the chia seeds into the mixture (make sure that they don’t clumb up)
  3. Pour the mixture into a glass jar. Cover with a lid and refrigerate overnight, or for at least 2 hours to allow the chia to form the pudding

To plate your pudding, take a mango and cut it in small pieces. Spoon out the seeds and scoop the pudding into the middle. Serve cold with a spoon.
