For all lovers of Indian cuisine, here is a tasty and easy-to-prepare recipe. Dahl, or red lentil curry, is one of the most famous dishes of Indian cuisine. And this is not really a surprise. Coconut, plus a perfect combination of spices, lentils with a perfect texture and quinoa … An explosion of flavours that will leave no one indifferent. Recipe from @beatrizmoliz
Ingredients
100 grams of NaturGreen red lentils
60 grams of quinoa *
2 cups of vegetable broth
200 ml of Ecomil coconut cooking cream
1 chopped leek
1 piece of finely chopped ginger
1 clove of garlic
1 handful of parsley
1 teaspoon of turmeric and pepper **
1 teaspoon of yellow pepper (optional)
1 teaspoon of cumin
2-3 cayenne peppers
2-3 cloves
1 handful of spinach
1-2 tablespoons of NaturGreen coconut oil
The juice of half a lime
Salt to your convenience
To decorate:
Grated coconut
Parsley
Preparation
1.Put a pot on the fire with a few tablespoons of coconut oil. Finely chop the leek and brown over medium heat. When the leek starts to turn transparent, add the chopped garlic, ginger, all the spices, your red lentils and the quinoa. Stir well for a few minutes.
2.Then add the two cups of vegetable broth and let it boil for 15 minutes. Lentils and quinoa should be cooked before the next step.
3.After this period, add the coconut cooking cream and lime juice. Leave a few more minutes over medium heat.
4.Then add a handful of fresh spinach and stir again. Turn off the heat and let it rest.
5.Serve hot with some grated coconut, parsley and a lime juice.
* The red lentils cook easily, to marry the textures, it is recommended to let the quinoa soak for a few hours.
** To enjoy all the nutrients of turmeric, it is recommended to mix it with black pepper.
